Instructions
To make the chocolate chips, begin by allowing your butter to soften to room temperature. Once softened to room temperature, add your butter to a mixing bowl, and beat on medium speed using your mixer. Beat until creamy.
Once creamy, add to the mixing bowl, brown sugar, granulated sugar, maple syrup, and eggs. Beat on medium speed once more until the mixture is combined and creamy.
Next, into the mixing bowl, with your mixer off, add all-purpose flour, cornstarch, baking powder, baking soda, salt, and vanilla. Mix until combined, and the dog begins to clump into one large ball.
Add in chocolate chips, and mix just until combined.
Wrap the dough in plastic wrap, or seal it securely in a gallon bag being careful to remove any excess air. Placed into the fridge for approximately one hour to allow it to chill.
Once it has chilled, preheat your oven to 350°F.
While your oven is preheating, take a cookie sheet and spray it lightly with cooking spray. Next, use a cookie scoop, or roll your cookie dough into balls approximately 1 inch in diameter. Place them onto the cookie sheet with space in between.
Bake for 10 to 15 minutes until the cookies are done to your liking. Hint: we usually like to bake them for 12 to 14 minutes to get them just right. But the exact time may vary depending on your oven, and your preference.
Once the cookies have been baked, allow them to rest on your cookie sheet for a few minutes before moving. Then place them on the wire cooling rack to continue cooling to room temperature.
Once your cookies are cool, they are good to enjoy!
Notes
NOTE: We have found that this recipe works the best when you allow the dough to chill overnight if time allows.
