Cream together peanut butter, powdered sugar, and butter.
Set aside peanut butter mixture and chill in the refrigerator
Remove from refrigerator and roll dough into 1/2" thick. Cut with egg shaped cookie cutter.
Chocolate Coating
Melt chocolate with coconut oil in a saucepan over medium low heat.
Carefully dip peanut butter eggs in melted chocolate, allowing excess chocolate to fall away.
Place chocolate dipped peanut butter eggs on parchment paper.
Add sprinkles while chocolate is still wet.
Chill and allow chocolate to set up.
Serve and enjoy.
