After the dough has risen to double in size, it is time to shape the bagels. Begin by pressing the dough to deflate it. Then shape it into a ball.
Divide the dough ball into eight equal-sized pieces. Once divided, shape each section of dough into a ball, then pinch the bagel to open the center. Place the shaped bagels on a clean surface, cover them with a damp towel, and allow them to rise for 30 minutes.
While the bagels are rising, take a large pot and fill it about halfway with water. Bring the water to a boil, then add 1 tsp of baking soda. When the baking soda has dissolved, remove the water from the heat.
Preheat the oven to 425°F.
When the bagels have risen, drop each bagel into the baking soda water, then place them onto a greased baking sheet.
If desired, brush them with an egg wash, and then sprinkle them with any desired toppings.
Place them into the preheated oven, and bake for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Remove them from the oven and allow them to cool before serving, then serve and enjoy!
