Zucchini Pizza Casserole Recipe

Simple Ingredients:

Fresh Zucchini. Fresh zucchini will give you the best results when making this pizza casserole. You can use frozen, if necessary, but you will want to be sure it is thoroughly drained before using it. 

Salt. You will want to have a little bit of salt, approximately a teaspoon of salt to mix with the shredded zucchini.

Large Eggs. A few large eggs also go into the base of the zucchini casserole. It will work best if you have large eggs. However, if you have medium or small eggs you can use those, you might just want to add an extra one.

Mozzarella Cheese. Mozzarella cheese is included in this casserole. It goes both in with the zucchini and as a topping.

In addition to using mozzarella cheese, if you need a cheese substitute you could also use goat cheese or your favorite type of cheese. Another great alternative to mozzarella is farmers’ cheese. 

Parmesan Cheese. Parmesan cheese is also used in this recipe. I recommend using grated Parmesan cheese, but you can also use freshly shredded if necessary. 

Cheddar Cheese. Cheddar cheese is an optional ingredient, but it does enhance the flavor profile if you include it. However, if you have dairy intolerance, you might want to go with goat cheese instead of cheddar. 

Ground Beef. We like to use approximately a pound of ground beef to make a 9 x 13 casserole of the zucchini pizza recipe. However, if you would like an alternative option, you can use Italian sausage, or ground turkey as delicious alternatives. 

Olive Oil. A little drizzle of olive oil can go a long way. Although not required, it is recommended that you use some olive oil in this recipe.

Pizza Sauce. You can use your favorite type of pizza sauce, tomato sauce, or marinara sauce as the sauce for this zucchini pizza casserole.

How to Make Zucchini Pizza Casserole Recipe 

Preheat the oven to 400°F.

To begin making the zucchini pizza casserole we’re going to start with the pizza crust portion.

First take some fresh unpeeled zucchini, typically sized medium zucchini will work best, wash it thoroughly, cut the ends of the zucchinis off, then use a cheese grater, or food processor to grate the zucchini.

Then take the shredded zucchini and place the zucchini in a colander. Sprinkle with a teaspoon of salt, to drain any excess moisture from the zucchini.

This will get rid of as much moisture as possible from the shredded zucchini. Let the shredded zucchini sit for a few minutes until all the excess water is drained out.

Now it’s time to make the crust portion. Into a large mixing bowl, combine zucchini with eggs, Parmesan cheese, half of the mozzarella cheese, reserving approximately a cup of mozzarella cheese for later use, and the shredded cheddar cheese. 

Mixed-use ingredients together until well combined. Then use nonstick cooking spray, to spray this baking dish. Pour the zucchini mixture into the greased baking dish, and gently press the mixture down to form an even zucchini crust.

Bake the mixture at 400 degrees Fahrenheit for approximately 15 to 20 minutes or until the edges of the baking dish begin to bubble, and the zucchini mixture turns a light golden brown around the edges.

When the zucchini pizza crust is done baking, remove it from the oven and let it rest while you are preparing the remainder of the zucchini pizza casserole.

After you have placed the zucchini mixture in the oven to bake, you can begin to brown ground beef or your desired meet, whether it’s Italian sausage or ground turkey.

Place the ground beef in a large skillet over medium heat. This is the beginning of the sauce mixture. Cook the ground beef until it has browned, then add in some finely chopped onion, and a diced green pepper. Sauté the mixture just until the onions become translucent in color. 

Add your desired type of pizza sauce into the sauce mixture, stir to combine, then remove it from the heat. 

When the cheesy zucchini crust has finished speaking, and your sauce mixture is ready, pour beef mixture on top of the zucchini crust. 

Top the sauce mixture with additional shredded mozzarella cheese, then add other toppings as desired such as diced ham, pepperoni, or any other pizza toppings you enjoy. 

Place the finished casserole back into the oven at 400°F and bake for an additional 10 to 20 minutes or until the casserole bubbles and the cheese has begun to turn a light golden brown color. 

Remove the casserole from the oven and let it rest for a few minutes before serving. Then serve and enjoy your delicious zucchini pizza casserole!

Storage of Zucchini Pizza Casserole

At room temperature. After your zucchini pizza casserole has baked, you can leave it at room temperature for no more than two hours before it goes bad. After that, the zucchini pizza casserole should be stored in the fridge. 

In the fridge. To store your leftover zucchini pizza casserole, it should be transferred to an airtight container or wrap securely with plastic wrap. Then place it into the fridge for up to 3 to 4 days.
