Cut up the onion and peppers. Place onion, peppers and garlic into a large, heavy pot to sauté with a splash of olive oil until slightly browned. sprinkle in salt and pepper.
Add in the turkey and more salt if desired. Cook until the turkey begins to turn brown.
Add in kidney beans, tomatoes, beer, and water. Bring to a boil and then reduce heat but keep the chili simmering. Stir occasionally. Cook on medium - low heat for 30 minutes or until chili is cooked through.
Add in lime juice and cilantro leaves and stir in.
Ladle into warm bowls and serve.
