Rinse your shrimp and scallions and pat dry. Let them dry completely. Cut into small pieces and put into a bowl.
In a new bowl combine flour, sugar, salt, baking powder, milk, eggs and melted butter. Once all ingredients are in, mix together until there are no more lumps. Add in the shrimp and scallions. Gently mix together.
Heat the large skillet with about 3 tablespoons of oil, while batter rests. Once warm, scoop about 1/4 to 1/2 cup batter into skillet. When batter becomes solid around the edges, check bottom to make sure it is golden. Once golden, flip and cook the otherside throughly.
Serve while hot and enjoy!
