1lbbeef (chuck or round roast), cut into 1-inch cubes
1small onion, thinly sliced
3cloves garlic, minced
salt and pepper
1small sweet potato, peeled and cut into 1/2-inch cubes
1cuplow-sodium chicken broth
½cupchopped fresh cilantro
Prep all the ingredients. Season the beef generously with salt and pepper. Heat the oil in a large sauté pan over medium heat. When it’s hot and shimmering, add the onions and season with a generous sprinkling of salt and pepper. Cook until the onions are soft, 4-6 minutes.
Stir in the garlic and cook 1 minute. Stir in the ground fennel and cumin, and cook until the spices become fragrant, 2-4 minutes.
Add the beef, sweet potatoes and broth to the pan. Stir to combine everything, then cover and bring to a simmer. Turning down the heat if you need to, gently simmer until the sweet potatoes are tender and the beef is cooked through, 15-25 minutes.
When the beef and sweet potatoes are done, turn the heat off (but leave the pan on the burner) and stir in the yogurt until it heats through, 2 minutes. Stir in the cilantro and season to taste with salt and pepper.Enjoy Indian Style Beef And Sweet Potatoes!
