Heat the olive oil in a medium sauté pan over high heat. When the oil is hot, add the sausage and stir, crumbling it into small pieces. Leave the sausage to brown for about 2 minutes, then stir to brown evenly throughout, cooking it for about 2 more minutes.
Lay the pitas on a large baking sheet, and spread with tomato sauce. Top with onion, carrots, sausage, pepper and mozzarella (as well as any other desired toppings).
