Preheat oven to 375F. Mix the spices together: salt, black pepper, rosemary, cinnamon, chili powder and garlic. Pat the spice mixture over the pork.
Chop the onion, celery and apples and place them in the bottom of a roasting pan. Add the pork on top of the vegetables. Place in the oven and roast for 1 hour.
Pour the cider over the pork and lower the temperature to 325F. Roast for another hour, basting with pan juices every 10 minutes, until the temperature of the roast reaches 170F.
