Begin by making your crust. Make sure that you are using cold ingredients. To start off add your flour, salt, and cubed cold butter into a mixing bowl. Cut with a pastry cutter, food processor, or whisk until you have pea-sized chunks remaining.
Slowly pour your ice-cold water into the mixture. Mix only until your dome begins to come together. By hand roll into a ball.
Take your crust and divide it into two balls. Next, lightly flour on a clean surface and roll one ball flat. Place your rolled-out crust into a lightly greased cast-iron skillet. Take your other pie crust and roll it out as well. Set aside.
Now to make your apple pie filling take a deep skillet and add your peeled, cored, and cut baking apples into your skillet. Add water along with the apples. Cover the apples and allow them to simmer until soft.
Next, in a small mixing bowl combine brown sugar, cinnamon, apple pie seasoning, and all-purpose flour. Pour the mixture on top of your cooked apples. Add lemon juice. Stir to combine and allow to simmer for a few more minutes until your apple pie filling begins to thicken. Remove from heat and allowed to cool.
Preheat your smoker to 375°F.
It's now time to assemble your apple pie and begin smoking. Pour your prepared apple pie filling into your cast-iron skillet lined with a crust.
Add your top crust layer over the apple pie filling and flute the edges of your pie crust. Brush with milk and sprinkle the top with sugar.
Add your pie to your smoker and smoke for approximately 1 hour, or until your pie crust is baked.
Remove from the smoker and allow your pie to cool slightly before serving. Serve if desired with a scoop of vanilla ice cream, enjoy!
