In a medium saucepan, add sugar and 1 cup water. Simmer over medium-low heat, stirring consistently, until your mixture begins to turn a light golden color, remove from heat. This typically takes approximately 8 minutes.
Add ½ tsp salt (or to taste). Carefully stir to combine. Add additional 1/4 to 1/2 cup water and bring mixture back to a boil. Boil for one minute, then remove from heat. Allow the mixture to cool.
Once cooled, store your caramel syrup in an airtight container in the refrigerator, or add it to your coffee right away. Serve and enjoy!

Don’t Burn It. When making this recipe, it is important that you keep a very close eye on your water and sugar mixture so that it does not burn. When it starts to turn golden, only let it cook for a few more seconds, then remove from the heat when your mixture is a light amber color.Add More Water. You may find that your mixture starts to harden when you remove it from the heat. This is why we add additional water and boil it the second time. After more water is added, and your mix boils the second time around, you are left with a lovely syrup that easily mixes into your drink.
