Begin making your smoked pizza by preheating your smoker. We recommend preheating your smoker to 400°F before adding your pizza.
While your smoker is preheating, roll your pizza dough out so that it is flat. Then, if using a pizza stone, preheat it by placing it on your smoker while it is warming up. You can also use aluminum foil for your pizza. Sprinkle cornmeal over the surface where you will add your pizza dough, i.e. on your pizza stone, or aluminum foil. Add your pizza dough.
While your smoker is preheating, assemble your pizza. Place your roll out pizza dough on either aluminum foil, or your preheated pizza stone. Top with pizza sauce, shredded mozzarella cheese, shredded Parmesan cheese, and sprinkle with Mamma Mia’s seasoning blend. Add your desired toppings to the pizza.
When your smoker has fully preheated to 400°F, and your pizza is assembled, you are ready to go!
Place the pizza onto your smoker and allow it to smoke at 400°F for 15 to 30 minutes. The cooking time will depend on the size of your pizza, your smoker, and the outside temperature. Keep a close eye on your pizza so that it does not burn.
To tell if your pizza is done, your cheese should be melted, and the bottom of your pizza crust should have started to turn a light golden brown. Your crust may also have started to turn a light brown as well. When you see these signs, remove your pizza from your smoker, allow it to sit for a moment or two before cutting. Then serve right away and enjoy!
