In a microwave-safe bowl, add your butter, and microwave for 1 ½ to 2 minutes, until butter is completely melted and warm. Remove from the microwave and add 1 cup chocolate chips. Let the bowl sit for 3-5 minutes until chocolate chips have melted, then stir to combine. Pour the mixture into your mixing bowl.
Add sugar and eggs to your melted chocolate and butter mixture, mix well. Add baking powder, salt, vanilla extract, and all-purpose flour. Mix until combined. Add remaining ½ cup chocolate chips and fold in.
Spray an 8x8 square pan with cooking spray and pour your batter into the pan. Bake for approximately 20-30 minutes, or until the center is set. Cut into large brownie slices, top with a scoop of vanilla ice cream, and top with a drizzle of chocolate sauce before you serve and enjoy.

For the full-on Texas Roadhouse look, you can line muffin tins with foil, parchment paper, or even muffin liners, then fill ½ way full of brownie batter before baking at 350°F for 8-12 minutes, or until the center is set. You may also choose to use a mini cake pan or mini springform pan for even larger brownies. #2. Those of you who are nut lovers may enjoy adding nuts to the brownie batter before cooking as well. #3. You might try chilling your brownies before serving for a bit of a different taste. This will help the brownies to set up and become a bit more fudge-like. For best results when chilling, be sure to cover securely in plastic wrap, or seal in an airtight container.
