Before you begin, wash all of your lemons, and pat them dry. Then slice the lemons and remove any seeds. You will also want to line your pie plate with your prepared unbaked pie crust.
In a blender, add 1 ½ lemon that has been sliced. To the blender, also add butter, sugar, eggs, and vanilla. Blend on high, or pulse for several minutes, or until no chunks remain.
Pour your blended filling into the prepared pie crust, and place into the oven. Preheat the oven to 350°F. Bake for approximately 40 to 50 minutes, or until the center is no longer gooey. Remove from the oven and allow your pie to cool.
After your pie has cooled to room temperature, place your pie into the refrigerator and chill.
Chill your pie until you are ready to serve. Then before serving, decorate your pie, with your prepared whipped cream, slices of lemon, lemon zest, and powdered sugar as desired. Then serve and enjoy.
