Strawberry Banana Cake With Cream Cheese Frosting
Ingredients
For the Cake:
- 2 ½ cup all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- ¾ tsp salt
- 1/8 tsp cloves
- 1 ¼ tsp cinnamon
- ½ cup oil
- 1 ¼ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ½ cup ripe bananas
Filling:
- 1 pound strawberries
- 3 Tbsp corn starch
- ½ cup water
- 1 Tbsp lemon juice
- ¼ tsp salt
- 1 cup sugar
Cream Cheese Buttercream Frosting:
- ½ cup salted butter
- 8 oz cream cheese
- 1 tsp vanilla extract
- ¼ tsp salt
- 4 cups powdered sugar
Optional:
For The Whipped Cream Cheese Frosting
- 1 pint heavy cream
- 1 tsp vanilla extract
- ¾ cup powdered sugar
For The Ganache Drip And Filling
- 6 Tbsp heavy cream
- 2/3 cup chocolate chips
Instructions
- Preheat the oven to 375°F.
- Make your banana cake batter by adding your dry ingredients, followed by your wet ingredients to your mixing bowl. Add flour, baking powder, baking soda, cloves, cinnamon, oil, sugar, eggs, and vanilla extract. Then add your mashed bananas before mixing the ingredients. If desired, fold in strawberry slices before pouring into your greased cake pans. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Turn the cakes out of the pan and allow them to fully cool.
- In a medium-sized saucepan, add cornstarch and water. Stir until cornstarch is dissolved. Add strawberries and stir. Place saucepan over medium-low heat. Add lemon juice, salt, and sugar. Stir occasionally until the mixture begins to thicken. Once thickened, remove from heat, and allow to cool.
- In a mixing bowl, cream your butter and cream cheese. Add in vanilla extract, salt, and powdered sugar. Stir until combined.
- Assemble your cake by adding your first layer of the banana cake. Next, add frosting and strawberry filling if desired. Add the next layer of cake, and top with cream cheese frosting. If desired, add strawberry filling on top as well. Decorate using fresh strawberry and banana slices. You can also add nuts, whipped cream, or ganache if desired.
Notes
Please note that we typically use frozen strawberries when preparing this cake. However, fresh strawberries may be used as well if you wish. If desired, slices of fresh strawberries may be added to the cake batter, as well as layered together with the cake as you assemble it. For a fancy finish, decorate the top of the cake with strawberry and banana slices. Finish off by adding swirls of cream cheese frosting.
