Begin by adding your chicken breast to the crockpot and cover with a cup of water. Cook over high heat until chicken is fully cooked, then shred the meat.
Add the rice and water to your crockpot. Cook on high for 1 hour and 30 minutes, or until your rice is fully cooked. Add more water if needed.
Top with broccoli florets.
In a mixing bowl, combine mayonnaise, cream of chicken soup, and lemon juice. Stir to combine. Pour on top of broccoli in the crockpot. Smooth over the top.
Sprinkle the top of your mixture with shredded cheese, cover, and cook until your cheese is melted. If you want it ready right away, use your high heat setting. If you intend to be away for a while, heat it over the lowest heat setting. If desired, top with corn flakes, serve, and enjoy!
