Place your Dutch oven over medium-low heat. Drizzle some olive oil in the bottom of the pan and add your onion and garlic. Cook until onions are transparent.
Add diced potatoes to your mixture with ½ cup water. Stir to combine and cook while covered for 5 minutes.
Add in cut green beans, sliced sausage, and 1 cup water with beef bouillon dissolved in it. Stir to combine. Cover and place into the oven. Preheat your oven to 375°F and bake covered for 30 minutes, or until potatoes are fully cooked.
Once cooked, remove from the oven. Remove ½ cup broth. Pour into a bowl with 1 Tbsp corn starch. Whisk together until no lumps remain. Pour back into the mixture, stir. Season with salt and pepper as desired. If desired, garnish with sliced almonds. Serve and enjoy!
