Grated Beet, Frisee, Walnut And Goat Cheese Salad
white wine vinegar
rinsed and dried
peeled and cubed
crumbled or cubed
drained and rinsed
In a mixing bowl, combine shallot, vinegar, salt and pepper. Let sit for 10 minutes. Whisk in honey, and then steadly pour in olive oil while whisking. Whisk on a medium-high speed for 5 minutes.
Cut off the root end of the frisée lettuce. Remove any pieces that look brown. Rinse lettuce and dry throughly. Cut into bite sized pieces. Add to a large bowl.
Take your beets, rinse and pat dry. Cut off the top and bottom of the beet. Peel the beet and then cut into small cubes. Add to your large bowl with the frisée.
Take your goat cheese and crumble or cut into small cubes. Add into your large bowl with frisée. Also add walnuts and chickpeas that have been washed and drained.
Drizzle on your vinaigrette dressing. Gently tossing as your dressing is added, to be sure you get a full coating of dressing.
Serve immediately after dressing is added. Serve and enjoy!
