Preheat oven to 375°F
In a large mixing bowl, mix butter until it becomes creamy. Add in peanut butter and mix well. Stir in granulated sugar and brown sugar, mix until creamy. Turn the mixer off.
Add in baking soda, baking powder, eggs, vanilla, and all-purpose flour. Mix just until combined.
If desired, cover and chill dough until it is easy to handle, or between one and two hours. This step is not required if your dough is already easy to handle.
Roll dough into small balls, about one inch in diameter, and place on a lightly greased cookie sheet.
Using a fork’s prongs, make a crisscross mark on the center of the cookie, so that it slightly flattens out the cookie at the same time.
Bake between 8 to 10 minutes, just until the bottom begins to turn a golden brown. Remove from oven, and sprinkle with granulated sugar.
Allow cookies to cool slightly before transferring to a wire rack to cool the rest of the way. Store in an air-tight container. Serve and enjoy, while hot or after cookies have cooled!
