In a mixing bowl, blend together the flour, sugar and salt.
Add the cold butter and cut in with a pastry cutter or in a food processor until the mixture resembles a coarse meal.
Add the yolks and continue blending with the pastry cutter or food processor until it resembles coarse meal.
Continue blending, adding the water until the dough is held together.
Divide the dough into 2 parts and chill for 2 hours.
Remove from refrigerator and let stand at room temperature for 20 minutes.
Roll the dough on a lightly floured surface until the size of tart pan. Trim edges.
Poke crust with a fork. Bake at 375F for 15 minutes.
