Bring a large pot of water with salt and 1 Tbsp olive oil to a boil. Add spaghetti noodles and cook until the noodles are cooked. Reserve 1 cup of pasta water, but drain the rest.
While pasta is cooking, in a skillet over medium heat, warm olive oil until it begins to simmer. Add diced strawberries season with salt and pepper as desired. Cook stiring often until strawberries begin to fall apart. It should take between 8 to 10 minutes.
Once cooked, add vinegar and stir in. If desired add a little of the pasta water to the strawberry mixture. You want the sauce to be thin enough to coat the noodles but not too runny.
Mix the drained pasta and sauce together until noodles are coated. Add parmesan cheese and basil. Mix together well. Serve while hot and enjoy!
