In a medium saucepan prepare your rice. Depending upon your rice, this process usually takes about 20 minutes for the rice to fully cook. Once cooked remove from heat.
Taking the beans first, rinse them with water to drain any liquid that came in the can. Let all juice and water drain from the beans in a strainer. In a samll saucepan heat the beans and enough water to cover them, until they begin to simmer. You want the beans to be warm, they do not need to cook.
Next take your broccli in a meadium saucepan and steam it. If you are using frozen broccli you can put it in a pan with a little bit of water and cook over medium heat for about 10 minutes. If you are using fresh, add a little extra water and cook over medium heat. Cook until broccoli begins to get soft.
In a bowl combine cheese, olive oil, pepper, salt, and cilantro. Mix together until combined.
In a large non-stick skillet heat canola oil until it is hot. Microwave tortilla shells for 30 seconds. On some free preparation space, lay out your warm tortilla shells, scoop in your rice, beans and broccli. Add your cheese mixture. Roll the wraps up tightly.
Place in oil and cook over medium heat until the outsides of the wrap become golden on all sides. Remove from heat. Can be served with hot sauce, sour cream or salsa if desired.
