Before you begin, start by preparing the brussels sprouts. Make sure that you remove any brown from the brussels sprouts and that they are good to go.
Now take a large pot of water and place it over high heat. Bring the water to a boil. While you are waiting for the water to boil, fill a large bowl with ice cubes and cold water.
When it is boiling, add your salt, and brussels sprouts. Boil for 4 minutes.
Remove the brussels sprouts from the boiling water, and place them into the ice bath.
Let them remain in the ice bath for 30 seconds to 1 minute before removing them. Drain the water and allow the Brussels sprouts to dry.
While your brussels sprouts are resting, make your seasoning. In a small saucepan melt your butter.
When the butter is melted, add chili powder, paprika, sea salt, red pepper flakes, pepper, and honey. Stir to combine. Remove from the burner.
Now, take your frying oil and place it over medium heat, with a thermometer in it to monitor the heat.
While your oil is heating, we recommend cutting your brussels sprouts in half for better flavor.
When your oil reaches 350°F (177°C), add the blanched brussels sprouts to the oil. Fry them only for a couple of minutes just until the brussels sprouts get crispy.
Remove the brussels sprouts from the oil and remove the oil from the burner to cool.
Place the brussels sprouts on a paper towel-lined plate to drain any excess grease. Once the grease is drained, add to a mixing bowl, and drizzle with your butter and seasoning mixture. Toss to combine. Once seasoned, serve right away, and enjoy.
