Wash the potatoes, and peel them if desired. Rinse well. Fill a medium saucepan with 4 cups water and 1/4 teaspoon salt and chopped potatoes. Bring to a boil. Reduce the heat to medium low and cook until the potatoes are tender, 10 to 20 minutes. Remove the pan from the heat, cover, and set the potatoes aside.
Prepare the remaining ingredients. Warm the olive oil and butter in a large sauté pan over medium high heat. Add the ham and stir. Cook, stirring regularly, until the ham browns a bit, 2 to 4 minutes.
Stir in the chopped cabbage, season lightly with salt since the ham is already salty. Add pepper and the sage, and mix together gently. Cook, mixing occasionally, until the cabbage begins to wilt, about 2 minutes. Uncover the pan and continue cooking until most of the water evaporates and the cabbage is tender, 3 to 5 additional minutes. Add salt and pepper to taste if needed.
