Preheat the Smoker. Begin your smoked baked potatoes by preheating your smoker to 225°F. Allow to fully preheat while you are preparing your potatoes.
Prepare the Potatoes. Thoroughly wash and pat dry your potatoes. Take a fork and poke holes in your potato all the way around. Then brush with olive oil and roll in your salt, garlic salt, and pepper mixture. You will want the outside of your potatoes to be coated in the salt mixture.
Smoke Them. When potatoes are prepared, and your smoker is preheated, place your potatoes directly on the grates of your smoker. Close and smoke for approximately two hours or until the internal temperature of your potatoes reach 205 to 210°F.
How to tell when a baked potato is done. There are two main ways you can tell when you are smoked baked potato is done. Those two ways are by touching your potato, with a utensil such as a fork or a skewer, and taking the internal temperature of your baked potato. Touch. Do not touch your potato with your hands or fingers, it’s very hot and we’ll learn you. To tell if your potato is done, take a fork or a skewer and try inserting it into your potato. If it goes in easily, then your potato is most likely done. Temperature. You can also use the instant-read thermometer to take the internal temperature of your baked potato. If your smoked potato has an internal temperature of 205 to 210°F, then your smoked baked potato is done smoking.
Determine that your potato has finished smoking, then carefully use tongs and remove it from your grill. Slice open the top of your potato and squish it so that it separates. Use a fork and scrape the inside of your potatoes so that it is light and fluffy. Add your desired toppings, then serve and enjoy.
