Fried Cobb Salad Zaxby’s copycat recipe is made on a bed of mixed greens, with tomatoes, cucumbers, bacon, hard-boiled eggs, as well as cheddar and Jack cheeses. And don’t forget the chicken.
3Battered chicken tenders or grilled chicken breast
1cupMixed greens
1small Roma tomato or grape tomatoes
1small Sliced cucumber
1/8cupShredded cheddar cheese
1/8cupShredded Jack cheese
1/8cupFully cooked bacon
2Hard boiled eggs
1/8cupFrench fried onionsoptional
Instructions
Prepare and rinse bed of mixed greens. Arrange as desired on a plate.
Boil eggs by placing them in boiling water and cooking for 12 minutes. Let cool and remove shells.
Fry bacon by placing it on a foil lined baking sheet in a 400F degree oven for 10 minutes or until crisp. Drain grease and chop bacon into bite sized pieces.
Rinse cucumber and chop into bite sized pieces.
Cook chicken according to package instructions. Or if using chicken breast, grill or bake until the internal temperature reaches 165F degrees.
Assemble the salad with the desired toppings. Serve with your favorite salad dressing and enjoy.
