The oven to 350°F. While your oven is preheating, place your pan in the oven so that the glass warms at the same rate as your oven.
To start making your crust, melt your butter, then add into a small mixing bowl with powdered sugar, flour, and salt. Stir just until mixed together. Spray the bottom of your 9 x 13 pan with cooking spray and pour in your crust. Pat it down with your hand so that it is solid. Place it into the oven and bake for 10 to 15 minutes or until it begins to brown around the edges. Remove from the oven.
While your crust is baking, in a mixing bowl combine eggs, granulated sugar, lemon juice, and flour. Whisk to combine. Add lemon zest and whisk just until mixed in.
Pour your lemon filling, into the pan with your pre-baked crust. Cover the top of your pan with aluminum foil so that your bars do not overbake on the top. Place back into the oven, and bake at 350°F for another 15 to 20 minutes.
Remove from the oven, and dust the top of your bars with powdered sugar. Allow your bars to cool completely before serving. Then serve and enjoy.
Notes
Do not use aluminum or another metal pan because the lemon will react to the metal. For best results, you will want to use a glass or ceramic 9 x 13 pan.
