Instructions
Make your according to package instructions. Set aside
Brown your ground beef (or meat of your choice) until it is fully cooked. Add taco seasoning and minced garlic. Stir to combine, then set aside.
Preheat your oven to 400°F
Begin your casserole by starting with an 8 x 8 pan that has been greased. Add your first layer of prepared rice, then add your black beans that have been rinsed and drained, next add your canned corn that have been drained. Your next layer will be your ground beef mixed with taco seasoning and garlic. Then spread your mini sweet peppers and Roma tomatoes over the top. Sprinkle on some shredded cheese of your choice, and top with some dried cilantro flakes. Bake for 15-20 minutes, or until the cheese is melted, and your casserole is warmed all the way through.
When you serve this, top with a dollop of sour cream and fresh guacamole serve with your favorite tortilla chips. Serve while hot and enjoy!
