Begin by making your starter. In a mixing bowl, combine honey and yeast. Pour in ¾ cup warm water, and stir until yeast is dissolved. Rest the starter for 5-8 minutes, or until it is foamy and bubbly.
Add all-purpose flour, sea salt, soft butter, and the remaining 1 cup warm water to the dough. Stir until the dough begins to clump together.
Roll out onto a lightly floured surface and knead it for five minutes. Shape the dough into a ball, then place it into a lightly oiled bowl. Cover with a towel and let rise for about one hour, or until doubled in size.
Roll out onto a lightly floured surface and knead it for five minutes. Shape the dough into a ball, then place it into your oiled Dutch oven. Cut your design on top of the dough if desired. Cover, and let rise for thirty minutes.
After the second rising, place your Dutch oven into the oven to bake at 400°F for 20 minutes. Remove from the oven, and dust with salmonila flour or cornmeal. Place back into the oven for 10 minutes at 350°F. When the time is up, check to see if the center is done by inserting a toothpick. If the toothpick comes out clean, allow your bread to cool before serving. Serve and enjoy!
