Preheat oven to 375°F
Begin making this recipe by taking a medium saucepan, and adding two cans of peaches in syrup, and heating them until they become warm.
In a small mixing bowl combine corn starch with water and lemon juice. Whisk until corn starch is dissolved. Add brown sugar granulated sugar and cinnamon stir to combine. Pour this mixture into your peaches. Stir then allow to come to a simmer. Simmer stirring occasionally until the peach mixture starts to thicken. Remove from heat.
Once your peach mixture has started to get thick, pour it into a lightly greased Dutch oven, or casserole dish. Set aside.
In a mixing bowl combine one yellow cake mix, butter that has been melted, eggs, quick oats, cinnamon, nutmeg, and cloves. Stir until combined.
Taking your prepared batter, scoop portions of it on top of your peaches. Repeat this process until all your batter has been added on top of the peach mixture.
Place your peach cobbler into the oven uncovered and bake for 30 minutes. Once the time has passed check on your peach cobbler to see if it needs additional time. Set a timer for five minutes and check on it again.
Once your peach cobbler is fully baked, the batter on top should be a golden-brown color, and there should not be any gooey batter remaining. Once fully baked, remove from the oven, and serve while hot. Add vanilla ice cream when serving for additional wonderfulness.
