Preheat the oven to 325°F
In a mixing bowl, combine sugar, egg, butter, and bananas. Mix ingredients together.
Add your baking soda, salt, cinnamon, and flour. Stir until mixture is combined. Add any extras you desire such as chocolate chips or nuts.
Take your bread pan and spray it with cooking spray so that the bottom and edges are coated. Pour your batter into the pan and spread it so that the batter is evenly distributed.
Bake at 325°F for 1 hour, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool for 10-15 minutes inside the bread pan before you try to remove it. Take a knife or spatula and separate it from the edge and the bottom, before you try to remove the bread. Set it on a wire rack to cool or serve with a bit of butter while it is still warm, and enjoy!
If you want, this bread can be made ahead and stored in the freezer for up to four months. When freezing, be sure to wrap it securely in plastic wrap, and then place it inside another plastic bag, to prevent it from going bad.
