Preheat your oven to 350°F
Start preparing your cones so that they have time to dry completely. Begin by tossing your cream-filled vanilla cookies into your food processor and pulsing until fine. If you do not have a food processor, you can place your cookies into a sealable plastic bag. Then roll over them using a rolling pin using your muscle to crush them. Continue crushing the cookies until they are at least pea-sized or a little smaller. Pour into a bowl.
Pour your white chocolate chips into a microwavable bowl and microwave for 30 seconds at a time, stirring in between. My microwave typically takes between 1 minute and 1 minute 30 seconds for the chips to be completely melted. Gradually pour in your whipping cream as you stir the melted chocolate. Work the chocolate until the cream is completely mixed in.
Dip your cone first into the melted chocolate and then into your crushed cookies. Place upside down on a cookie sheet to allow the chocolate to harden. If your chocolate is taking its time setting up, you can also place the finished cones in your fridge to speed up the hardening process.
Now it is time to create your peach cobbler. Spray your 9x13 pan with cooking spray, then pour your canned peaches, including the juice into your pan. Add in cinnamon if desired and stir to combine. Next, sprinkle your dry cake mix on top so that the entire pan is covered evenly. Finally, take your stick of butter and slice it thinly. Place your slices of butter across the top of your cobbler. Place in the oven and bake for 45-60 minutes, or until the top is golden. Remove from oven and allow to cool.
Your last component to create is your cheesecake filling. Pour your heavy cream into a mixing bowl and whisk on high until stiff peaks form, set aside. In a separate mixing bowl, combine cream cheese, powdered sugar, vanilla, and lemon juice. Whisk on medium-high speed to combine. Into the cream cheese mixture, carefully fold in your whipped cream until combined.
All of your components have now been made, and it is time to assemble your delightful treat! Take your cone and add alternating scoops of cheesecake filling and peach cobbler until your cone is full. Top with a drizzle of melted white chocolate chips or a sprinkle of crushed cookies. Serve immediately and enjoy!
