Paula Deen’s green bean bundles are easy to make and can be prepared and cooked in about 30 minutes. Assembling them is a great project for kids to help with too.
Thaw and blanch the green beans. Place a pot of water on the stovetop on high temperature until it begins to boil. Add green beans. Boil until tender and crisp, but still bright green (about 3 minutes).Transfer the green beans to an ice bath immediately to stop the cooking.
Assemble green beans into little bundles that are roughly adequate serving sizes. Wrap with a half slice of bacon. Lay in a baking pan seam side down. Sprinkle with olive oil and salt seasonings.
Bake at 425 degrees Fahrenheit for 15 minutes until bacon is browned. Or grill on high for 15 minutes, turning regularly until bacon is browned.
