Preheat oven to 375F. Grease the sides and bottom of a 9x5” baking dish.
Line the bottom of a prepared baking dish with blueberries. You can also use frozen blueberries, but make sure to thaw them before hand or they will render too much water while baking. Reserve a hand full of berries for the topping.
In a medium bowl, mix pecan pieces, cinnamon, oats, baking powder and salt for topping. Set aside.
In another bowl, combine wet ingredients including milk, eggs, honey, melted butter. Melt butter in the microwave for10-15 seconds if necessary. Whisk until completely blended.
Cover the berries with the oat mixture and pour the milk over the top. Gently shake the bowl to make sure the milk goes down through and completely covers the oats.
Sprinkle the remaining berries on top. Sprinkle sugar for extra shine and crunch if desired.
Bake for 45 minutes until the top is golden brown and crispy.
Serve warm with a dollop of whipped cream or a scoop of French vanilla ice cream or yogurt. Enjoy Blueberry Morning Cereal!
