Today we are excited to share with you our copycat recipe for chipotle roasted chili corn salsa. Before we begin, we want to be sure to point out that there are two variations of this recipe found on the internet. 

One is found directly on Chipotle’s website, and the other is found on TikTok by Chipotle as well.

Because of these two similar and slight variations of the recipe, there is a little confusion as to what the correct recipe is, but we are excited to share our variation with you. 

Below we will be sure to outline what the differences are between Chipotle’s two versions found on the internet.

Please note that the main difference is found with the poblano pepper, as their website shows that it is included, but the TikTok video does not.  

Let’s begin exploring this delicious recipe by looking at the ingredients needed. 

Copycat Chipotle Roasted Chili Corn Salsa Recipe

Recipe Ingredients and Notes:

White Sweet Corn. This delicious salsa recipe begins with white sweet corn. We recommend that you use white sweet corn because it is what Chipotle uses and allows your salsa to be sweeter than when using other types of corn.

You can use fresh white sweet corn or canned white sweet corn for this recipe depending on what you are able to find. As always, fresh is best, but if you’re not able to find it, you can simply use canned. 

Cilantro. Fresh cilantro is used to flavor the salsa. We strongly recommend you use fresh cilantro if you are able, but it may be substituted with dried cilantro if you’re not able to find fresh. 

Red Onion. A fresh red onion that has been finely diced adds a bit of heat and flavor to the delicious salsa. 

Jalapeño. Jalapeños also add flavor and heat to the salsa recipe. You will notice in Chipotle’s TikTok video that the seeds from the jalapeños are included in their salsa, but if you wish to decrease the heat, you can dispose of the seeds before chopping the jalapeño peppers. This will help to reduce the heat and make your salsa not so spicy. 

Poblano pepper. Depending upon if you trust the TikTok video put out by Chipotle or their website stating the ingredients for their roasted chili corn salsa, will determine if you want to include a roasted poblano pepper or not.

We tend to believe that it is probably included since their website states it as such, and they simply forgot to include it when making the video. But it is entirely up to you and if you are able to even find this pepper at your grocery store.

Lime and Lemon juice. Lemon and lime juice are both added to the salsa to help enhance the overall flavors and add a lovely citrus flavor. If possible, fresh lemon and lime juice will give you the best flavor, but you can use bottled juices as well. 

Salt. A bit of salt is also added to the salsa to help enhance its overall flavor. Although the type of salt included is not described by Chipotle, we recommend using kosher or sea salt for the best flavor.  

Step-by-step instructions:

How to Make Chipotle Corn Salsa with Roasted Chili

Start off making this copycat corn salsa by preparing all of your ingredients. First, take your red onion, and chop it finely. Then take your cilantro and chop it finely.

Next, take your jalapeño peppers, cut them in half, and remove the stems. Remove the seeds as desired, keeping in mind that the more seeds you have the hotter your salsa will be. 

Now that your onion, cilantro, and jalapeño peppers have been chopped into small pieces, it’s time to roast. 

When you are using fresh white sweet corn, you will want to roast it for a few minutes until the corn is cooked.

You can roast it in the oven by first wrapping each cob with aluminum foil, then place it into the oven at 425°F (218°C) for approximately 20 minutes or until the corn is tender.

Allow the corn to cool, then cut from the cob. 

If you are using canned corn, you can simply drain any liquid from the cans, then pour your corn onto a rimmed cookie sheet and place it in the oven at 425°F (218°C) for approximately 10 minutes or until it is lightly roasted. Remove from the oven and allow the corn to cool for a few minutes.  

It is time to roast your poblano pepper. You can do this by placing it over a low open flame on your gas burner, being very careful, or you can roast it in the oven which is our preference and much safer! 

To roast the poblano pepper in your oven, you can simply preheat your oven to 425°F (218°C) and place it on a cookie sheet or directly on your oven rack. Keep a close eye on it and allow it to heat for approximately 10 to 15 minutes or until it appears cooked. Once you see signs that it is starting to look cooked, carefully remove it from the oven and allow it to cool before handling it. 

When the poblano pepper has cooled enough to handle it, slice it in half, and remove the stem, and any seeds. Chop into small pieces. 

Preparing the Salsa

Once all of your ingredients have been prepared it is time to assemble the salsa.

Into a mixing bowl add your roasted corn and roasted poblano pepper.

Next add your chopped red onion, chopped cilantro, and chopped jalapeño. On top of this mixture, add your lemon juice, lime juice, and salt. Stir until combined. 

Serve while still warm, or chill in the fridge and then serve cold. Enjoy!

How to use Chipotle Corn Salsa

Typically, roasted chili corn salsa is served as a side dish or appetizer along with tortilla chips. However, if you wish this salsa can also be served as a topping for your Mexican favorites. 

How to Serve

Our copycat recipe for chipotle roasted chili corn salsa is best served when fresh or shortly after it has been prepared. If you wish to prepare a day in advance it is still good.

We recommend serving the salsa while it is still warm and after it has been prepared, or after it has been chilled for a little while in the fridge. It is entirely a matter of preference as to whether you enjoy the salsa chilled or warm. 

Storage

At room temperature. We recommend that for food safety this salsa should not remain at room temperature any longer than two hours before it is stored in the fridge. 

In the fridge. For longer storage, transfer your salsa to an airtight container or seal it in a plastic storage bag then place it in the refrigerator for up to 3 to 4 days. 

Recipe Tips and Variations:

Jalapeño Seeds. The heat in your salsa is determined by how many seeds from your jalapeños are included in the salsa. Keep in mind as you are preparing this recipe that the more seeds you include in the salsa the spicier it will become. 

With or Without Poblano Peppers. As we have already mentioned, there is a discrepancy online from Chipotle as to whether they include poblano peppers or not. The TikTok video does not state openly that it is included, but their website does. 

Upon close inspection of the TikTok video, we noticed that there are dark pieces in the corn mixture. We believe that these are the poblano peppers, and they are included in the official Chipotle recipe, but simply are not stated. It is entirely up to you if you wish to include this pepper or not when making the salsa.

How To Roast Poblano Peppers

If you choose to include the poblano pepper, you will first want to roast the pepper before including it in the salsa. There are a few different ways you can choose to roast the pepper. 

Oven method. Our favorite and perhaps the easiest way to roast the pepper is in the oven.

To do this preheat the oven to 425°F (218°C) then place the pepper directly on the oven rack, or on a cookie sheet.

Roast in the oven for approximately 8 to 12 minutes or until you begin to see signs that the pepper is cooked, such as black or brown marks, and a soft texture to the pepper.

Remove the pepper from the oven and allow it to cool before dicing. 

Stovetop method. Another way you can roast the pepper is to use your gas burner on the stovetop. When you do this, it is important to keep the flame low and turn the pepper keeping a very close eye on both the flame and your pepper. If you choose to use this method, please be extremely careful. 

Grill method. Another easy way to roast pepper is to place it on your heated grill. With the burner of your grill over medium-high heat, add the pepper, turning it occasionally until it is browned, and soft. Allow the pepper to cool before dicing it. 

Chipotle Corn Salsa Serving Suggestions

The most common way that Chipotle roasted chili corn salsa is enjoyed, is as a dip with tortilla chips.

However, if you wish to enjoy salsa alongside other dishes such as enchiladas, burritos, chimichangas, or quesadillas, it is quite delicious.

You can also use the salsa as a topping for your taco salad.
