Mexican Spaghetti

Mexican Spaghetti recipe is a nice variation to basic spaghetti. 

By using sautéed chipotle tomatoes you can add a hit of Mexican flavor to a simple spaghetti dish. Then top the dish off with diced avocado for a delicious and yet unusual twist. 

This recipe serves 4 people

You Will Need:

Dried spaghetti
Chopped sweet onion
Olive oil
Garlic cloves
Canned chipotle tomatoes
Canned crushed tomatoes
Ripe avocado

How To:

In a large pot add water and a dash of olive oil. Bring it to a boil. Add in spaghetti noodles and bring the water to a rolling boil. With the noodles boiling, cook for about 10 minutes or until noodles are soft.

In a frypan add olive oil and cut onions. Cook over medium heat until the onions are soft. It should take about two minutes. Add in the minced garlic and cook again for about 1 minute. 

Next add in chipotle tomatoes and crushed tomatoes. Add in salt and pepper. Simmer over medium heat for about 8 minutes. 

Drain the noodles through a strainer once they have finished cooking. 

In a serving dish add noodles, and top with sauce. Sprinkle cut avocado across the top of the spaghetti. Serve and enjoy!
