As this Christmas season quickly approaches, we have a new recipe for you to try, to make the best shortbread Christmas cookies. This recipe is easy to make and tastes wonderfully delicious. This tasty shortbread Christmas cookie recipe will help you get away from the normal sugar cookie recipe, and try something a little different. This recipe is also very similar to Stauffer’s Christmas cookies. 

Stauffer’s Holiday Shortbread Cookies

Like our copycat recipe, Stauffer’s holiday shortbread cookies are basic shortbread cookies that are sometimes topped with icing and sprinkles. Our copycat recipe, although not the same as Stauffer’s, is made using a similar recipe. Some of the benefits of making your own homemade cookies is that you get to have fun making memories, and you also get to prepare them however you wish. Meaning that if you enjoy icing, you can add as much as you wish. Or if you like to add sprinkles, you get to add your choice. 

My favorite with homemade shortbread cookies is that I get to make them to my desired thickness and cook them to my desired doneness. This way, I get to enjoy my cookies, while they are still a bit chewy, instead of totally crunchy.

Shortbread Christmas cookies are made using only a few common pantry baking items. Once your dough is made, it is chilled then rolled out, and cut into your desired shapes. The shapes can be anything you wish, from using a cookie cutter to get your shapes, to cutting out little triangles, to get a mini-Christmas tree shape. If you want, you can add sprinkles right into your dough, or you can add them to the icing later.

Making the best shortbread Christmas cookies is quite easy. The main difficulty in handling shortbread cookie dough is that it tends to be a very dry dough. This can be handled by working with small portions of your dough or adding a tiny bit of water to the dough. Otherwise, making them into delicious cookies is quite easy. Shortbread Christmas cookies are so simplistic, yet oh so good!

How To Make Christmas Tree Cookies

The process of making shortbread Christmas tree cookies is a simple one. You will want to start by mixing together your room temperature butter, with both sugars. Mix them until they are creamy in texture. Then add your remaining ingredients, and mix until the dough starts to come together. This might take longer than normal cookie dough because this dough is so dry. 

Once your dough begins to come together, roll it into a ball, and place it in an airtight container, or wrap it in plastic. Place the dough in the fridge to allow it to chill for thirty minutes. Once chilled, roll your dough out on a surface that is lightly covered in powdered sugar. Cut out your shapes. 

Place your shapes on your prepared cookie sheet. Bake for about ten minutes, until your dough is firmly set. Allow the cookies to cool before adding your glaze and sprinkles if desired. If you are adding glaze, your cookies will turn out the best if you allow the icing to dry before serving. Serve and enjoy.

Ingredients

Cookies:

1 cup salted butter, soft
½ cup granulated sugar
½ cup powdered sugar
½ cup cornstarch
2 cups all-purpose flour
1 tsp vanilla extract
½ tsp salt

Icing: 

2 cups powdered sugar
1 tsp vanilla
1 Tbsp butter melted
2 Tbsp milk (or until the desired thickness)
Food coloring (optional)

Instructions

In a mixing bowl, cream your butter, and sugars. Once white and creamy in texture, add flour, cornstarch, vanilla, and salt. Mix until it starts to stick together. Roll the dough into balls and wrap in plastic. Chill for 30 minutes. 

Preheat oven to 325°F.

Roll your dough out onto a lightly powdered sugar surface. Roll and cut into shapes. Place shapes on a greased cookie sheet. Bake cookies for 8-10 minutes, or until the cookies are set. Allow to cool on a wire rack. 

Make your frosting by combining the above ingredients. Add enough milk so that your frosting can drizzle but is not too runny. Glaze your cookies and allow the icing to set before serving. Serve and enjoy!
