Broccoli And Red Bean Burritos are a relatively quick and easy dish to prepare. The three main ingredients are fresh (or even frozen) broccoli, a can of red beans and shredded cheese. These wraps make for a delicious and easy meal, yet at the same time they are very satisfying.

Shopping List:
broccoli
canned red beans
canned kidney beans
prepared white rice
shredded mozzarella cheese
shredded cheddar and Monterey Jack cheese
olive oil
pepper
salt
cilantro
tortillas
canola oil
Equipment
large sauté pan
three sauce pans
mixing bowl

Instructions:
In a medium saucepan prepare rice. Depending on the rice used, this process usually takes about 20 minutes for the rice to fully cook. Once cooked remove from heat.
Rinse the beans with water to drain any liquid that came in the can. Let all juice and water drain from the beans in a strainer. In a small saucepan heat the beans and enough water to cover them, until they begin to simmer. The beans should be warm, but they do not need to cook.
In a medium saucepan steam the broccoli. If you are using frozen broccoli it can be placed in a pan with a little bit of water and cook over medium heat for about 10 minutes. If you are using fresh, add a little extra water and cook over medium heat. Cook until broccoli begins to get soft, but is still bright green.
In a bowl combine cheese, olive oil, pepper, salt, and cilantro. Mix together until combined.
In a large non-stick skillet heat canola oil until it is hot. Microwave tortilla shells for 30 seconds. Lay out the warm tortilla shells, add rice, beans and broccoli. Add cheese mixture. Roll the wraps up tightly.
Place in oil and cook over medium heat until the outside of the wrap becomes golden on all sides. Remove from heat. These can be served with hot sauce, sour cream or salsa if desired.
