You can also add your favorite seasonings to the inside of the taco shell with the cheese mixture. Some good spices to use include garlic salt, garlic powder, taco seasoning, dried cilantro, and cumin. Any other spices you desire can also be added so that this recipe fits your exact taste preferences.

There are two main methods that you can follow to make a tortilla cheese roll up. If desired sprinkle seasonings on the outside of your tortilla shell. Place them on a baking sheet, and then add your freshly grated cheese to the inside of your tortilla shell. Add desired seasonings, then roll your tortilla shells tightly. Place your prepared cheese roll ups into your oven or air fryer at 350°F for about 10 minutes. Bake just until the outside has begun to turn golden, and your cheese is melted on the inside. Serve right away and enjoy!

4 large flour tortilla shells
2 cups of freshly grated cheese (cheddar, mozzarella, and pepper jack work great!)
4 Tbsp butter, melted
1 tsp garlic salt (optional)
½ tsp garlic powder (optional)
1 tsp taco seasoning (optional)
¼ tsp cumin (optional)
1 tsp dried cilantro (optional)

Instructions

STEP 1: Make The Taco Seasoning Mix 

In a small bowl or cup, combine your optional seasonings. Then stir to mix. Feel free to add or remove any of the optional seasonings listed above. 

STEP 2: Combine The Cheese 

Freshly grated cheese works best, take your choices of cheese, shred them, and then mix the cheeses together in a bowl. Or, if preferred, you can use a Mexican cheese blend of shredded cheese. 

STEP 3: Season The Tortillas 

Next, take your tortilla shells, and brush both sides with butter. Sprinkle your seasoning mix on the outside of your tortilla shell. Place seasoned side down on plate, or baking sheet. 

STEP 4: Roll The Tortillas 

To your prepared tortilla shells, add the mixture of shredded cheese, equaling about ½ cup per tortilla. Add in any desired seasonings to the cheese. Then, roll your tortilla shells tightly.

STEP 5: Melt The Cheese

Microwave Method

To melt the cheese in a microwave, place your prepared cheese roll ups and a microwave-safe plate, and make a wave for 30-second intervals until your cheese is melted. Serve right away and enjoy. 

Oven/Air Fryer Method

To use an oven, or air fryer to melt the cheese in your roll ups, place your prepared tortillas on a baking sheet, then bake at 350°F for approximately 10 minutes, or until the outside of your shells are beginning to turn a golden brown, and the cheese is melted. Serve right away and enjoy!

Notes

For best results, we recommend using freshly shredded cheese, however, you may use prepackaged shredded cheese, if you wish. Also, please note that for a more Taco Bell authentic cheese roll up, you will want to use the microwave method. However, baking your roll ups in the oven makes them even better, without the mushy texture of your tortilla shell.
