Chickpea And Parmesan Salad

ingredients
2 15-ounce cans chickpeas, rinsed and drained
1/4 cup chopped fresh parsley
1 clove garlic, minced
2 tablespoons olive oil
4 tablespoons fresh lemon juice
1/4 teaspoon red pepper flakes
1/3 cup freshly grated parmesan

instructions
In a bowl, toss together everything but the parmesan. If you've got the time, let the salad marinate at room temperature for 30 minutes or more. Mix in the parmesan just before serving.

The mixture above (minus the lemon joice) can be cooked and poured over spaghetti. Then, once blended with the pasta, add the parmesean. So good!
