Pesto Sauce

This classic pesto sauce is bright and fresh. Mix it with pasta, or use it as a dressing for salad and vegetables. If you feel like a different flavor, try substituting almonds for the pine nuts or parsley for the basil - both great options.
ingredients
1/3 cup pine nuts, lightly toasted
2 cups loosely packed fresh basil leaves
1 clove garlic, peeled
1/2 cup olive oil
1/2 cup freshly grated parmesan cheese

instructions
1. To toast the pine nuts, heat them in a dry sauté pan over medium heat until they lightly brown in spots.
2. Put the pine nuts, basil and garlic in the food processor and pulse to a rough paste. Next, while running the processor, drizzle in the olive oil to make a thick, wet paste. Pour the pesto into a bowl and stir in the parmesan cheese. Season with salt and pepper to taste.

I've never bothered to toast the pine nuts before making pesto, but this really turned out so much better. I accidentally burned the pine nuts a ittle bit, but it still tasted great. Kind of smoky pesto.
