Broiled Thai Shrimp
serves 2-4
Broiling is an often overlooked, easy way to quickly cook shrimp. The full range of Thai tastes and flavors in this dish really stand up to the brininess of the shrimp without overwhelming their pleasantly marine bite.
3 tablespoons fresh lime juice
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon honey
1 tablespoon grated fresh ginger
3 cloves garlic, minced
2-3 green onions, white and light green parts, thinly sliced
1 teaspoon chili powder
2 pounds shrimp, peeled and deveined
prep: 1 hour
total: 1 hour 10 minutes
large bowl
whisk
aluminum foil
baking sheet
tongs
2. Preheat the broiler and place the rack 6-8 inches below the heat source. Place the shrimp on skewers or in a single layer on a foil-covered baking sheet and drizzle with the marinade. Broil for 2-3 minutes, then turn the shrimp and broil until the shrimp are opaque, another 2-3 minutes.
