Spicy Penne With Shrimp And Mint

3/4 pound penne
1 serrano pepper, thinly sliced
1 pound shrimp, peeled and deveined
12 fresh mint leaves, sliced
2 tablespoons olive oil

1. Bring a large pot of water and 2 teaspoons salt to a boil over medium-high heat. Add the penne and stir. Cook until the pasta is just al dente. Reserve 1/4 cup of the pasta water.
2. Meanwhile, prep the shrimp, serrano and mint.
3. When the pasta's done, heat the olive oil in a large sauté pan over medium-high heat. When it's hot and shimmering, add the shrimp and stir briefly. Leave the shrimp alone to brown on the first side, 1-2 minutes. Turn the shrimp over and stir in the sliced serrano. Add 1/4 cup of the pasta water and reduce the heat to medium.
4. Drain the pasta and add it to the pan with the shrimp. Stir in the mint and cook, tossing everything together, 1 minute. Drizzle with more olive oil to taste.
