Braised Balsamic Radicchio develops a wonderful aroma when cooked. In the following flavorful recipe, it’s braised with onion and several tasty spices to give it a wonderful added palatableness. When shopping for radicchio, choose firm heads that are deep in color and that have some weight to them. You should choose heads that are about equal in size in order to balance the cooking process.

radicchio
olive oil
onion
clove garlic
red wine
balsamic vinegar
rosemary sprigs

baking dish or pie pan

Braised Balsamic Radicchio

Instructions:
Preheat oven to 375F. Heat half the oil in a skillet until hot. Add the quartered radicchio and brown on all sides. Place in an appropriate baking dish that is large enough to hold the radicchio without stacking it in the pan.

Sauté the onion and garlic in the remaining oil in the skillet. Cook for 2 minutes until softened and slightly browned.

Add the wine and the vinegar to the sauté pan and bring to a boil. Pour over the radicchio. Season the dish with salt and pepper. Place the rosemary on the top.

Bake at 375F for 40 minutes, until radicchio is tender.
